LAMB SHANKS BRAISED IN COUNTY PREMIUM CIDER

Ingredients
  1. 3 2-inch thick lamb shanks
  2. all purpose flour for dusting
  3. 5 tbsp butter
  4. 2 tbsp olive oil
  5. 1/4 cup apple cider vinegar
  6. 4 cups premium County Premium Cider boiled until reduced by half
  7. 1 bouquet garni
  8. 2 tbsp fresh thyme, chopped
  9. sea salt and freshly ground pepper
Instructions
  1. Preheat oven to 350F.
  2. Season lamb shanks with salt and pepper and dust with flour. Heat olive oil and 4 tbsp of butter in a skillet over medium-high heat. Add shanks and cook until brown on all sides. Transfer shanks to a Dutch oven.
  3. Deglaze skillet with cider vinegar, reducing by half. Add sauce and bouquet garni to Dutch oven. Cook covered for 1 hour or until the meat is tender.
  4. Set aside the shanks and cover with foil. Discard the bouquet garni
  5. Reduce braising liquid until it coats the back of a spoon. Whisk in remaining butter, add salt and pepper and strain.
  6. Pour sauce over the shanks and garnish with fresh thyme. Serves two.
