PHEASANT MARINATED IN HARD CIDER

Ingredients
  1. 2 pheasant (or chicken) breasts
  2. 1 small leek, trimmed and chopped
  3. 2 cups onion, finely diced
  4. 1 carrot, finely diced
  5. 1 celery rib, finally diced
  6. 1 tsp green peppercorns
  7. 1/2 cup dry white wine
  8. 1 cup Waupoos Premium Cider
  9. 2 tbsp cider vinegar
  10. salt and pepper to taste
Instructions
  1. Mix together all ingredients in a large dish and allow the pheasant breasts to marinate for two to four hours.
  2. Remove pheasant from marinade and set aside.
  3. Transfer marinade to a baking dish and place the pheasant on top.
  4. Bake uncovered for 15 to 20 minutes at 350F
  5. To serve, set the pheasant on plates and top with marinade and citrus peel to garnish.
