Crepe Filling

  2. • 6 large apples (about 2-1/2 lb.) ones that keep their shape during cooking (Golden Delicious or Northern Spy) and ones that go soft but help to thicken the filling (Cortland or Empire)
  3. • 6 Tbs. unsalted butter
  4. • 1/2 cup granulated sugar
  5. • 1/2 cup dark brown sugar
  6. • 1/2 tsp. pure vanilla extract
  7. • Pinch salt
  8. • 1/2 cup Waupoos Cider

  2. • 1 cup flour
  3. • 1 tbsp sugar
  4. • Pinch of salt
  5. • 3 large eggs
  6. • 1 cup whole milk
  7. • 6 tbsp butter, melted
  8. • 1 tsp vanilla
  9. • Waupoos Cider as needed
  1. Crepe Filling Directions
  2. Peel and core hard apples and cut into slices.
  3. Peel and core soft apples and cut into chunks.
  4. Saute apples in butter, stirring gently until the soft apples start to break up.
  5. Add remaining ingredients and continue stirring occasionally until all sugars are dissolved. Simmer until thickened.
  6. Crepes Directions
  7. Put the flour in a bowl and make a well.
  8. Put the salt, eggs, milk and sugar (if using) in the well.
  9. Stir to mix, then gradually pull in flour and get rid of any lumps.
  10. Strain the batter if you want it extra smooth, then stir in the butter.
  11. Let rest 1 to 2 hours before cooking.
  12. Thin out the batter with cider to the consistency of light cream. Whisk well.
  13. Heat a non-stick crêpe pan over medium-high heat.
  14. Ladle ½ cup batter onto the pan and tip it quickly to cover the bottom.
  15. When the edges are brown, flip and finish the other side.
  16. Stack the crêpes and keep warm while you finishing cooking the rest.
  17. Assemble crepes by placing a generous helping of apples into the centre of each crepe and fold by rolling into a log or cone shape.
  18. Top with hard cider sauce (see recipe previous) or maple syrup and whipped cream.!
